While swimming in the back yard the other day, I couldn’t help but notice the enormous mint plant that my Grandma has been nurturing. This herb plant is huge, and the smell of the mint was powerful and fresh. I was inspired to grab handfuls of it and experiment to make edible food items and drinks. At first I made lemon/mint ice cubes. I also decided that I wanted to make cantaloupe, lemon and mint popsicles for dessert.
