Breakfast is my favorite meal of the day. I love a good gooey cinnamon roll or a thick stack of french toast with loads of butter and powdered sugar. Pre-boxing days, you could guarantee that if you put a box of doughnuts or bagels in front of me you it would be gone by the end of the day. Most of my trainers will say only eat a half orange and a protein shake for breakfast, but I can’t. I tried. I genuinely tried that option for a week and ended up gaining weight because I would binge in other ways. One of my coaches gave me her protein pancake recipe, which I want to share with the world, because without these protein pancakes I would die. Not only are they healthy for you, put they are amazing.
Seriously, the pancakes are approved by my mom and sister and they hate the “healthy” version of anything. I make all of my pancakes on Sunday and put them in plastic baggies so that I can grab one and eat it on my way to the gym in the morning (I have learned to love them cold). BUT, on Saturdays, its’s a whole different story. On Saturdays, I replace the oats with pancake mix and enjoy them hot and topped with berries and Almond Butter.
