French Toast

My all time favorite breakfast dish would have to be French Toast, which is why I decided to make it yesterday morning. The weather was stormy and ugly which meant it was a perfect day to have breakfast in bed, sip coffee, and work on some homework while watching movies on the computer. Over the years I have learned that making french toast is all about the bread, my little secret is using the whole loaf hawaiian bread where I slice my own super thick slices to soak in the egg mixture. I usually top with some powdered sugar and my favorite fresh fruit (strawberries), but yesterday we didn’t have strawberries so I switched them out for some dried cranberries that I had on hand!

Nikki - I so agree with the type of bread being important in French toast. We use brioche over here in France and it’s really good. Will have to try it with hawaiian bread when I’m back in the states.

Homemade Banana Bread

One thing I miss most about living at home is waking up to the smell of a batch of bread, fresh out of the oven! Although I am headed back home this weekend, I couldn’t wait for grandma’s homemade banana bread. So, I decided to call her and ask for the recipe. Nothing ever tastes quite like grandmas, but it was still delicious! Make your own with the ingredients below.

English Muffins

I have been wanting to make homemade english muffins ever since I bought my biscuit cutter in December. Sunday night I finally decided to whip them out, throughout the process I learned a few things:

1) This is a four hour process

2) These are what “english muffins” look like when there baked and not cooked in a skillet!

I thought I would share with you my oopsie moment in the kitchen… because all the recipes I try don’t always come out as expected!

Garlic cheesey bread

 I got my kitchen aid mixer for Christmas from my mom (by far my favorite gift), but have been staring at it for the past few days wondering what I should make. So last night I finally got the chance to use that beauty. I made homemade pizza dough to go along with the stuffed peppers (seen here) that we were having for dinner. I finally found a recipe that was fast, super easy to make, and tasted just like Asconas Pizza from my hometown. Just a few tips after making mine: add more cheese, make sure to brush the pizza edges with the garlic butter or olive oil, and sprinkle the cheese to the very edges.

Pumpkin Bread

Back home during the fall/winter months I would wake up to the smell of some type of bread in the oven. Most times the smell lingering through the house would mean that today was going to be a good day. My grandma makes the best zucchini, banana and pumpkin bread, which I sincerely miss while living down in San Diego. This past weekend the fog in San Diego was thick and erie which made for a perfect day to stay in bake and study. While the bread was in the oven I sat at my desk to study the smell lingered throughout the apartment and for a few seconds it felt like I was back at home. Once the timer went off.. I couldn’t help but cut into it immediately, it was so yummy. Just what I needed to keep me studying for statistics.

Kailani's Kookbook:Pumpkin Bread

Ingredients

1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups white sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon ground ginger

Instructions

  1. Over 350-375
  2. Grease pan
  3. In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended.
  4. Separate bowl, mix together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger.
  5. Combine both bowls ... stir the dry ingredients into the pumpkin mixture until just blended.
  6. Pour into the greased pans.
  7. Bake for about 50 minutes in the preheated oven.
  8. Loaves are done when toothpick inserted in center comes out clean.
  9. Eat warm with butter !!
