Chicken Lettuce Wraps

Last weekend after our family BBQ we had tons of left overs that I assumed we would have to eat for dinner throughout the week, so instead of having the same meal I decided to use our left overs to create a new meal! This is when the idea of lettuce wraps came to mind, it was perfect I used all of our left over chicken and mushrooms to create a dish that everyone in the family devoured. This recipe is so fast and easy and yummy that you must try it.

Chicken Lettuce Wraps


Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Serving Size: 7-8

Chicken Lettuce Wraps


4 boneless skinless chicken breasts
2 cups of water chestnuts (sliced)
1 cup of mushrooms
3 Tbs. chopped onion
1 tsp. minced garlic
Head of butter lettuce
Special Dipping Sauce:
1/4 cup sugar
2 Tbs. soy sauce
2 Tbs. ketchup
2 Tbs. rice vinegar
1 Tbs. lemon juice
1/8 tsp. sesame oil
1 Tbs. hot mustard
2 tsp. hot water
Stir Fry Sauce
4 Tbs. soy sauce
4 Tbs. brown sugar
1 tsp. rice vinegar


  1. Wash butter lettuce place in fridge
  2. Shred chicken
  3. Chop water chestnuts, onions, and mushrooms/ add garlic (set aside)
  4. Combine ingredients for special dipping sauce (place in fridge until ready to serve)
  5. Combine ingredients for Stir Fry sauce
  6. In large skillet cook onions, water chestnuts, mushrooms and garlic mixture for 5-10 mins
  7. Add chicken and stir fry sauce to mixture cook for 5 mins
  8. Place mixture in bowl and ready to serve with butter lettuce and special dipping sauce
  10. Place butter lettuce in freezer to chill
  11. Add cayenne pepper, red peppper flakes, and chili powder to mixture for a special kick
  12. Top serving with shaved carrots and chow mein noodles
