2 eggs (room temp)
2 slices whole grain organic bread (toast it)
1/2 tsp flax seeds
1 cup arugula
1 avocado (mashed)
5 cloves roasted garlic (chopped)
Mash the avocado in a separate bowl. Add in any spices you would like as well as the roasted garlic & mix well.
Bring your pot of water to a simmer
Place the silicone OX egg poachers in the water mesh side down.
Drop the egg in the middle of the poachers for 2-4 mins
Lift the silicone poachers out and use a slotted spoon to remove the eggs for the toast.
Toast your slices of bread.
Add the Avo mixture, lay the arugula on the bed of the avo mixture and lay the poached eggs on top.
Add radishes and flax seeds to garnish.
BOXER TIP: Use spices aside from salt to give it extra flavor.
